In the old days when tea was scarce and people had their own cattle, The milk that came out of the animals was then used for drinking.
And the rest of the milk was used to make lassi and the butter that came out with it was collected.
When a large quantity of butter was accumulated, it was melted to make ghee and that ghee was used in daily meals.
Apart from this, dishes were also prepared from this ghee at weddings and other occasions.
Tea consumption has increased everywhere, be it in the city or in the village, less used for drinking milk and making lassi.
But still in remote villages milk is saved for lassi and used to make lassi, butter is collected and ghee is extracted and used.



Ingredients

Butter………………………………………………………as needed
Wheat flour………………………………………………as needed

Method

 

  • Put Butter in a pan and let it melt on a very low flame.
  • When the butter starts to melt, Then a white foam will form on top, Now sprinkle a little wheat flour on top of this foam.
  • When all the foam has settled down with the flour and the melted transparent ghee has come up, then turn off the flame.
  • Strain the ghee and store it in a pot and use it when needed.
