Ingredients
 
Keri/Kacha Aam (Raw Mango)……………..1-1/5 Kg (after removing the seed and cutting)
Onions………………………………………………..500 Grams
Onions Chopped…………………………………..2 Medium
Oil/Ghee……………………………………………..1 to 1-1/25 Cup
Turmeric……………………………………………..1/2 Teaspoon
Red Chilli Powder………………………………..1 Tablespoon
Salt…………………………………………………….To Taste
Garlic cloves……………………………………….8 to 10
Coriander Seeds………………………………….4 Tablespoon
Fennel Seeds………………………………………4 Tablespoon
Cumin Seeds………………………………………1 Tablespoon
Mustard Seeds…………………………………….1 Teaspoon
Fenugreek Seeds…………………………………1 Teaspoon
Onion Seeds……………………………………….1 Teaspoon
Celery Seeds………………………………………1/4 Teaspoon



Method
 
* Cut all the raw mangos (keriyan) into four pieces and boil full done.
* Roast all the proven spices in a dry pan, and then separate a tablespoon from it.
* Blend 500 grams of onions, garlic and roasted spices with half a glass of water.
* Put one cup of oil or ghee, 1 tablespoon roasted spices and two medium-sized chopped onions in a pan, and cook the onion till golden.
*When the onions are golden, add the blended spices, 1 tablespoon chilli powder, 1/2 teaspoon turmeric, salt to taste and half a glass of water and fry the spices very well.



 
*When the curry is well fried and the oil separates from the curry,  add the boiled raw mangos (keriyan) and mix well.
*Add half a cup of water, mix well, cover and keep on a very low flame for 2 minutes.
*After two minutes, turn off the flame, remove the lid and dish out
*Delicious Keri Ka Salan (Raw Mango Curry) is ready, to enjoy with naan or chapati.
